Best of Mom's Dishes...Hummus with Beets.

Mom is lately back to her business and like always, she is making lots of delicious dishes.
A couple of days ago mom made "Hummus with Beets".. It became one of my favourite dishes!
It doesn't contain wheat..so if you're allergic to wheat or afraid to gain weight.. it's just perfect for you.


INGREDIENTS :
1/2 pound beets (about 4 medium sized beets), scrubbed clean, cooked, peeled, and cubed
5 Tbsp lemon juice
1 small clove garlic, chopped
1 Tbsp ground cumin
1 Tbsp lemon zest (zest from approx. 2 lemons)
Generous pinch of salt



Place all ingredients in a food  blender and pulse until smooth. 
Chill and store in the refrigerator for up to 3 days or freeze for longer storage.
